WINEMAKER NOTES
The fruit is harvested in the early hours of the morning when it is cool to retain the fresh fruit flavour. The grapes are pressed immediately to retain the fruit flavours and aroma whilst extracting as little colour as possible. Fermentation occurs over a 2-3 week period.
