Dominique Derain, a native of Beaune who settled in Saint Aubin, is a character in Burgundy! He is well known for his practice of biodynamics on his chardonnay, aligoté, and pinot noir vines, around the hill of Montrachet and in the combe de Saint-Aubin. The preparations are biodynamic to stimulate the soils of brown clay, crushed marble, and ferrous soils. Some very steep slopes can be plowed by horse.
