Terroir
Its originality lies in the length of its rows - 200 meters - on three different soils: - first a stony soil with an important limestone-clay ratio, - then a soil with small stones and a high proportion of clay, - finally a finer soil with clays and silts. This diversity of terroirs gives a rich and dense wine, much closer to the roundness and finesse of Vosne-Romanée than to the power of the Clos-Vougeot of the north of the appellation. In Burgundy, we often speak of a round cuvée because it takes in all the soil types that we can find in the appellation.
Winemaking
Harvesting is manual with 30% whole clusters. 3 weeks of fermentation with very light intervention. 50% of new oak barrels are used for an aging period of 20 months.
