Crafting Chardonnay Through Whiskey‑Barrel Innovation

From the innovative cellars of Jacob's Creek, the “Double Barrel” range was born as a bold exploration beyond conventional winemaking. For the Double Barrel Chardonnay, the winemaking team deliberately split the juice: one half first matured in traditional wine barrels and then finished in aged Scotch whisky barrels, while the other half followed the reverse — fermented in wine barrels then aged in whisky barrels. This unique double‑barrel process blends two distinct maturation paths into one wine, creating a depth and complexity rarely seen in Chardonnay.

The influence of whisky‑barrel finishing lends the Chardonnay a richer texture, subtle toast and vanilla notes, and a creamy mouthfeel without overpowering the varietal fruit character. Meanwhile, the underlying freshness and acidity of Chardonnay from South Australia’s vineyards keep the wine balanced and lively.
