In 1985 Lorenzo Simoni,started to refine the first bottles in his cellar. That date has been imprinted in the trentodoc Monfort Cuvee 85 Brut,as evidence of how far this sparkling wine cellar's commitment to the classic method is. The "recipe" was also taken from that time: not only more Chardonnay, but also a small percentage of Pinot noir: a touch of elegance inside a vartex of freshness and savoury.
