“La Ferme de Sato” is the couple’s personal estate project—focused on organic and biodynamic farming, with wines made using native yeasts, no fining or filtration, and minimal sulfur. The philosophy is simple: allow the vineyard to speak naturally.
“Sur Les Violettes” highlights one of their most perfumed Pinot Noir expressions—named after the floral notes that define the wine. Central Otago’s cool climate, high altitude, and intense sunlight create ideal conditions for Pinot Noir with both concentration and aromatic precision.
The result is a wine that feels alive—vibrant, slightly wild, and deeply expressive. It’s not about polish, but about authenticity and energy.
