A Tribute to Cistercian Origins
Clarevallis is a Champagne with a soul centuries deep. The name honors the Abbey of Clairvaux (Clara Vallis), founded by Saint Bernard in 1115 — a monastery that once owned the very vineyards where Drappier now works in Urville, Côte des Bar.
This cuvée is organic-certified, zero dosage, and made with a deep respect for monastic simplicity and terroir truth. It is bottled without sulfur addition, unfiltered, and fermented with native yeasts — making it one of the most authentic expressions of Côte des Bar chalk and Pinot-based Champagne available.
The base wine is a blend of 75% Pinot Noir, 15% Chardonnay, 5% Meunier, and 5% Blanc Vrai (a rare, local white grape — also called Pinot Blanc). Aged for 36 months on lees, with no dosage and minimal intervention.
